By heating, mixing and hydrating the materials beforehand, the shear required within the extrusion process is reduced, flavour and texture developed, and wear decreased. Output increases of up to 30% can be expected.

Further useful effects may include delicate and controlled denaturing of protein structures, destruction or deactivation of undesirable enzymes, and modifications of starches to improve functionality and improve processability.

This can also increase the efficiency of the extruder, its output, and can optimise the final product as expansion is easier to control.

Injection of liquid protein sources, colour and flavour is also facilitated, improving the perception and quality of the product.
